人形町にある、豚肉専門ビストロ「ラ ブーシュリー グートンBoucherie Goutons」
ブーシュリー・グートンでつくるのは豚をつかったフランスの郷土料理の数々。
最初は、銀座の洋食屋で長年フランス料理に携わってきたシェフに出会い、フランス料理の世界へ。2週間パリとリヨンで食べ歩きし、帰国後は丸の内のブラッスリーオザミのオープニング・スタッフとして3年、再び渡仏、ボルドーサンセレにある１星トロワソレイユで働く。帰国後は、ブーケ・ド・フランス、シェフとして恵比寿ル・ビストロ、2015年、独立開業。
店名のブーシュリーとは肉屋の意味。
グートン(Goûtonsの”Gou”はシェフの苗字である郷（ごう）で、”ton”は豚カツのトン。これら2つを合わせて、フランス語で「味わい」を意味する単語”Goût”にかけたのがグートン(Goûtons)なのだそう。
ランチタイムは、”グートン・カレー部“。金曜と土曜に開催される化学調味料を一切使わない無添加のスパイス・カレーを味わっていただくランチ。
メニューは３種。週替りポークピンダル、富士宮ブランド豚のポークキーマカレー半熟卵付き、富士宮ブランド豚の魯肉飯半熟卵付き。
週替りポークピンダルーと魯肉飯のハーフ＆ハーフに。

南インドのお茶、ルイボスティ。
【メイン】
「週替りポークピンダルー」
ビネガーをきかせた酸っぱ辛いシャバシャバカレー。南西インドのゴアという地方が発祥のカレーで、ポルトガルの影響を受けたシチューのような西洋風のカレー。リゾット風にご飯がスルスルと胃に収まりました。
「富士宮ブランド豚の魯肉飯、半熟卵付き」
とろとろに煮込んだ魯肉飯。甘めな台湾のよりも、程よくスパイス感があり、ご飯との絡みが良いです。
「ご飯」
ご飯の上には、赤玉ねぎのアチャール、じゃがいも、大根のアチャール、火入れしたキャベツ。
【デザート】
「ヨーグルトソルベ」
カレーで、しかも暑い日にはぴったり。さっぱりして、甘さ控えめ。
ずっとずっと伺いたかったLa Boucherie Goutons、お料理だけでなく、明るくて穏やかなシェフのお客様に対する振る舞いが素晴らしかった。この界隈の会社員さんに愛されていることに頷けました。やはり次回は、夜に。
ランチ部はあと2週間でお休みになるそう。
