Remarks	"Hegi Soba" is Local Cuisine that originated in the Uonuma region of Niigata. Our store has 4 restaurant in Tokyo (Nakameguro store, Yotsuya store, Roppongi store, and Shibuya store). At Tokyo Hegi Soba Takumi, we serve freshly made soba noodles directly from the production area every day. The soup is Kanto-style, with a slightly dark and strong flavor. At the Tsuyu Conference, where store managers from each store gather, we regularly review our soups and conduct research to ensure that we can always deliver the most delicious flavor to our customers.
