今日もかっ飛ばしていきましょうー。
老いぼれ同士が恵比寿で集まり卓を囲む。
二人が集まれば病院と介護の話になり、三人集まると葬式とお墓と御経の値段の話になる。
「感染対策」と称して17時に集まり19時に退散すればいいと考えていたが、
今の恵比寿はサラリーマンでも17時に家路に向かう方が多くなった。
フレックスタイム制なのか、そもそも朝早く勤務されて夕方には家路に戻るのかはわからないが、
それぞれの路地にたたずむ店に、夕方でも「静かな活気」がある。
恵比寿駅西口を出て恵比寿横丁からすぐの焼肉トラジ恵比寿園店さんに御邪魔しました。
恵比寿に限らず、都心の焼き肉専門店において「ランチの焼肉は儲からない」が定説であるが、
焼肉トラジさんの中で唯一ランチ営業をしている店である。
昼と夜の肉質の差も、ある程度の割り切りをもっておやりになっているのだろう。
「そりゃ爺さん、昼と夜じゃ、値段も違えば客層も違うだろ」 と言われればそれまでだが、
ランチで美味しいと感じたお客を、夜にいざなう方程式はこの店には存在しない。
コロナ禍において、スタッフのシフトの配置、昼ランチを行うことによる仕込みの時間の差配。
夜までの休憩時間等、トラジさんのチャレンジ精神には頭が下がる。
生ビール880円のグラスを見た時、「小ビール660円」をオーダーしたのかと思うあたり、
己の浅はかな記憶を真実だと思ったからであろう。
アジアのスタッフが多いことは決して引け目に当たらない。立派な指導をされていると感じる。
ポテンシャルも高い。
御任せで店員さんの薦めるお肉をいろいろと頼んだが、
この肉質でこの値段を払うのであるならば、もっと腹いっぱい良質な肉が食べられる店が広い東京にはたくさんある気がした。
お客としてわたしたちは何に対価を払ったかを事後に問い直すことは、
次回この店に足が向くかの最大のエンジンになる。
恵比寿という立地と常識的な接客、相応の肉質の通知表を足し算しても掛け算をしても優等生の枠にわたしは入らなかった。
生ビールのグラスのサイズは、お替りしても同じグラスで注ぐのが常識であるが、
ハイボールやカクテルのグラスのサイズもぜひ統一感を持たせて運営頂きたい。
注文ごとに次から次に変化する突飛なグラスのデザインを眺めて楽しめるのは、
それ以上に中身の酒が旨い時だけである。
馴染みのバーテンが語りかけながら注ぐカクテルならば、中身の量の増減には多少目を潰れるだろうが、どっこいそうはならない。
2階に上がれば、靴を脱いでこあがりの全個室となり、どんつきにはお遊びが出来る広さのカップル席もある。
コロナ禍で個室の素晴らしさが再認識され、圧倒的な立地と評判の接客で常識以上の評価をもらってきた焼き肉トラジさん。
それぞれの個室に消毒液一式を置かれても良い気がしました。
爺にしては辛口の評となったが、大きな期待の裏返しと思っていただきたい。
