サカナバルが手掛ける完全無化調に拘った塩らーめん
スープのベースに生ハムを使用し熟成された塩味を抽出、鶏ガラ、手羽先、豚ひき肉、煮干し、鰹節、鰯を香味野菜と共にじっくり煮込み、香り高いポルチーニ茸の出汁をブレンド。
チャーシューにはポルケッタを使用、ハーブや実山椒のペーストをバラ肉で巻き込みジューシーに焼き上げました。
スープの温度に触れると甘い脂身が溶けだしジャパニーズハーブの凛とした香りが立ちます。
