恵比寿にある鉄板焼き Sublime。（スブリム）
麻布十番のフレンチで過去に3年連続ミシュランを獲得したSublimeのグループ店舗にあたります。
こちらの店舗は鉄板焼きでそのフレンチのテイストが入った料理がいただけます。
高級感ある店内、お皿も御料理に合わせた作家さんのものを使い演出も最高です。
席間隔もゆったりしてるため居心地も良いです。個室もあります。
アミューズ、冷菜、温菜、海鮮料理、肉料理、デザートと続きます。
追加で伊勢海老と鮑をいただきました。
どの料理も美味しかったですが、気に入った料理は以下。
・黒毛和牛のSUKIYAKI
サッと温めたタレにくぐらせて火を入れたお肉にチーズソースとトリュフの組み合わせは相性抜群。
・ブリの鉄板焼き
まったく臭みがなく表面がカリッと中がふわっとした絶妙な火入れ。アーモンドとアンチョビのソースととても良く合って美味しさ倍増。
・伊勢海老の鉄板焼き
飛んでしまいそうなほど元気な伊勢海老をその場で鉄板焼に。生雲丹を合わせたアメリケーヌソースのコクや旨味とぷりっぷりの伊勢海老は至福のとき。
・鮑の鉄板焼き
活鮑を焼いた一品。シンプルなバターと醤油でいただく形ですが、鮑に旨味が詰まってるのでこの食べ方が一番ですね。ラッキーなことに雄と雌の肝もいただけて食べ比べで違いを実感できて嬉しい。
・黒毛和牛赤身の鉄板焼き
ミディアムレア。3つのソース。醤油漬けにんにくとこの赤身ステーキとの相性が抜群。肉の旨味がさらに濃くなりいくらでも食べれそう。
〆はガーリックライスでいただきましたが、鶏出汁をかけて味変していただくとこれがさっぱりとして最高の〆になりました。
デザートもあまおうを使ったパフェで見た目も可愛くて美味しかったです。
シェフもとても気さくで食材や料理の説明も丁寧にしてくださり、好みなども聞いていただき楽しい時間を過ごせました。
また会食などで利用させていただきたいと思います。
