``Yonezawa Beef''. One of the three major Japanese beef brands along with Kobe beef and Matsuzaka beef. This is the finest Wagyu beef raised with love in the Yonezawa Basin, where there is a large temperature difference, clear water, and clear air. At Gohachi, we purchase directly from Yonezawa Sato Livestock in Yonezawa City, Yamagata Prefecture, with whom we have a long-standing relationship. We use only long-term fattened cows that are over 33 months old and are fattened with love in a hygienic environment to avoid stress, and are Japanese Black cows with 75% Tajima lineage.
