When I tried to make a reservation at Notomi because I wanted to eat buri shabu, Saturdays and Sundays were full until two months in advance. So, I changed to sea bream shabu. I made a reservation from the website. The passer is the head of the sea bream. It's big, but it's hard to eat, and the flesh is small, so it's for "looking". I wonder if it's okay to go through normally. I ordered "sea bream shabu" ×2 and "sea bream licking". The sea bream shabu is set with green onions, shiitake mushrooms, and tofu in the broth. First, the clerk will show you a sample. I was told that it was ready to eat when the meat turned white, but since it can be eaten as sashimi, I liked to eat it half-raw, which has a good texture. If you dip the licking wax in the broth left over after eating, this is also exquisite. The staff was wonderful from beginning to end, and it was a model of employee education. At the end, we will see you off at the door. The only thing that was disappointing was the restroom. It's a very clean washroom, but since it's an underground restaurant, I can't help but be concerned about the smell of sewage. It's not the store's fault, but it makes me lose my appetite a little.
