This is a new Ramen shop in Shinjuku Golden Gai. The gentle taste of the chemical-free carbonated water soup and 100% domestic wheat noodles.

新宿駅東口から徒歩8分ほど。土曜日13:00頃の訪問。お店は新宿ゴールデン街の一番奥まった
ところにあります。外待ちなし。内待ちなし。
早速入店し、券売機で「ニラ麺（1250円）」の食券を購入し、空いているカウンター席に座ります。
先客は5名ほど。厨房は男性1名のオペです。水は各席にポットが置いてあります。ティッシュも
各席に置いてあります。
こちらのお店は2020年開店のお店です。元々はノーマークだったのですが、ウエブニュースで
ニラ麺の記事を何度かみかけて美味しそうなので、訪問してみることにしました。
着丼まで5分ほど。表面はニラの緑色一色のビジュアルとなっています。
まずはスープを一口。鶏出汁ベースですが鶏自体の出汁も主張することなく、清湯のあっさりした
お味です。スープが大量のニラの風味をまとって清涼感があります。
麺は細麺ストレート。茹で加減は普通です。コシがあってパツパツとした食感は食べ応えが
あります。
具材は、ニラ（一束使用しているようです、仕上げに熱した胡麻油をかけているようなので、
青臭さは一切なく、爽やかさもありつつ、ニラ特有の香りもあります）。チャーシュー（7個、
ブロック状のものが載っており、肉というよりもハムのような味わいです）。卵黄（崩すと
味変になります）。
後半味変です。卵黄を崩すと味がまろやかになります。加えてテーブル胡椒を投入すると
スープのエッジが増します。
そのまま食べ進めて完食／完飲しました。飲みの締めには最適かと思いました。ちなみに
まわりのお客さんはインバウンド率が高かったです。
