[Sushi and Japanese Cuisine Shinjuku Yonegami @Shinjuku] ~Introduction~Sushi and Japanese Cuisine restaurant that opened in Nishi-Shinjuku in January last year. When you go up to the 3rd floor of the restaurant building, you will see this shop alongside ``Tentomiya Azabu Yokoda Shinjuku Bettei.'' When I asked the staff at the store, it seems that it is a store affiliated with ``Tentomiya Yokoda''. The restaurant has a calm and clean atmosphere, with a spacious cypress counter and private rooms, and thankfully I was able to sit at the counter right in front of the owner. ~Food~ ◇Winter Sushi Chef Seating◇ This course offers not only nigiri but also other dishes such as tempura. ◆Spinach dip ◆Salmon lees soup Both have gold powder on them and look auspicious. The appetizer dipping sauce has a gentle taste that makes you feel relieved. The lees soup made with sake lees from Sawanoi Sake Brewery in Ome, Tokyo is so delicious that it soaks into your body. It warms your mind and body during this cold season. ◆Big fatty tuna/sashimi of the sole Serve fresh sashimi dipped in tamari soy sauce. I was wondering what sweet soy sauce and sashimi would be like... but oh, they go together so well. It's seriously delicious. ◆Small sea urchin bowl Horse dung sea urchin from Hamanaka, Hokkaido. The flavor of the luxurious sea urchin was irresistible. ◆Nigiri This is the first half of the nigiri.・Kyue: Refreshing with salted seaweed and vinegar citrus ・Shime mackerel: Black sesame under the toppings, white kelp on top ・Ark shell: Sweetly cooked kelp ・White squid: Bolivian salt and yuzu ・Kinmedai: Skin-like sea bream Grilled and seasoned with konbu ・Akami-zuke: Wild bluefin tuna with Japanese mustard.I was glad that I had my favorite red shellfish. The way the white squid knife is inserted is a work of art, and it's beautiful and delicious. The pickled red meat and Japanese mustard give it a different taste than wasabi. All of the nigiri are made with a lot of attention to detail, and I'm really impressed. ◆Tempura This is where tempura comes into play. The kitchen is connected to the neighboring restaurant ``Tentomira Yokoda'', so you can also get tempura from there.・Fried sweet sea bream in Matsukasa ・Fried bamboo shoots in Tosa ・Ginkgo with a light squeeze of vinegar and citrus. Fried Matsukasa is so delicious! The scales were crispy and the meat was so chewy that I couldn't resist it. Tosaage is said to be something that is sprinkled with bonito flakes and fried, and it is also delicious. Bamboo shoots and bonito flakes are a perfect combination. I have no complaints about my favorite ginkgo. ◆Nigiri Now we enter the second half of the grip.・Kuruma prawns: shrimp with miso ・Throat black: lightly seared with salt and vinegar ・Big fatty tuna: raw natural bluefin tuna ・Conger eel: cooked softly All of the second half are my favorites and are just too delicious. The flavor of the plump prawns is enhanced by the rich prawn miso. Throat black has a wonderfully juicy flesh, and otoro melts when you bite into it. Conger eel will make you ecstatic with its gentle flavor and outstanding softness. ◆Medium fatty tekka, salmon roe, and sea urchin hand roll The seaweed is served in an open state, so you can wrap it yourself. It's a little fun. As for the taste...I don't need any explanation. In one word, it's extremely delicious. Enjoying this at the end of the course is truly bliss. ◆Red dashi soup ◆Homemade chestnut steamed yokan/Matcha The red dashi soup also soaks into your body, and the gentle sweetness of the chestnut steamed yokan and matcha will leave you feeling relieved at the end. ~Summary~ Both the nigiri and tempura are incredibly delicious. The atmosphere was so relaxing that you forgot you were in downtown Shinjuku, and the host and female staff were very welcoming, making you feel good and enjoying the delicious course. I'm glad that you can have tempura as well as nigiri. The neighboring Tentomira Azabu Yokoda Shinjuku Bettei only serves tempura, but this restaurant also offers tempura as part of the course, so it's nice to be able to enjoy both. We were the only ones at first because it was early, but the counter seats were fully booked that day. If you want a counter seat, please make a reservation early!
