3rdとして再開したと知ってすぐ予約しました。
年末無理かと思ったけど取れました。
まずお料理は、久しぶりだからオーダーし過ぎたが全てが，やっぱりうまい！
料理の作りが丁寧で技も素材も良く輪島の某ビストロと相通じている感じがして更にテンションマックス。
•定番の白レバー

•シーザーサラダ
たっぷりの量にドレッシングと粉チーズ、半熟たまごのハーモニー、食わねば損
•パテドカンパーニュ
肉肉しくて塩味控えめで、食わねば損
•ガーリックシュリンプ
ガーリックとエビの香りのバランス、量もたっぷりで、食わねば損
•鹿肉炭焼き
臭み全くなくソースも肉を邪魔していなくて赤ワインと会う！ので食わねばならぬ
•ラム肉炭焼き 流石ジビエ得意なお店だけに程よいラムの香りが素晴らしいので食わねば損
•チーズ盛合わせ（小さい）
塩味が全くなく手をかけて別の熟成庫で熟成しているらしいがそれが伝わる。３種だったがチーズ毎に会う木の実、フルーツ、ドライフルーツが付け合わされていてデザートとしても一流で、食わねば損
•ワイン類
スパークリング、白、赤ワインはどれも一番安いグラスにしたがどれも1-2ランク上の感じで量は他店の倍はあるかな、飲まねば損
この手のお店では都内一だと思う。
事前に佐藤シェフから気を利かせた問合せもありいく前から期待ワクワクのお店でした。
