電車の駅から遠いが物凄い人気。
その訳を確かめるべく、休日の夕方に伺ってみた。マンションのような建物を専用階段で地下へ。質感のあるタイルと紅白のステンドグラスを基調とした設えだ。
店内はホール席にテーブルが整列、奥に個室というレイアウト。
人気の秘訣は、確かにあった。
それは驚くほど上質な肉質。そして、丁寧で親身なホスピタリティだ。
なるほどね。
◆前菜
・キムチ盛り合わせ、ナムル盛り合わせ、黒牛サラダ
キムチとナムルは人数分を盛り合わせ。サラダは個々にサービスされる。
ゴマのコクを感じさせるサラダのドレッシングの美味さが印象的だった。
◆一品料理
・牛スジの煮込み
柔らかく煮込まれたスジ肉。コクのある煮汁にネギが効く。豆腐の煮込み具合はかなり浅めで若干馴染んでいない感あり。
◆焼き物
1人あたりそれぞれ一枚ずつ。内容の充実感からか、ボリュームの不足は感じなかった。2種を一皿に盛り、食べ終わったころに次の皿がサービスされる。それを大事に食べ進める。
全てが新鮮でレアで食べられるものだが、肉によって焼き方に変化をつけた方が美味いらしく、焼き方についても丁寧に教えてくれる。薄切りの特上肉はスタッフが目の前で焼いてくれる。トングで摘まんだ薄肉をグリルの上で左右に振る「撫で焼き」という手法が面白い。ゆっくり、1往復半。これでベストな状態。新鮮な肉の歯ざわりが残り、しみ出てきた繊細な脂に包まれた肉本来の味が楽しめる。

チジミは小海老とネギが入ったもの。油ぽくなくドライな印象。ネギは見た目ほど味には影響していない。
■コムタンスープ【絶品】
アラカルトでハーフサイズで注文。これが大正解。サラッとした舌ざわりで淀みのないスープだが、実に深い旨味。ニンニク醤油タレが小皿に。骨の周りの肉を食べる際の味の変化を楽しむ。
◆〆もの
・冷麺
冷えてもコクのあるスープ。歯切れのよい麺と合わせてとてもサッパリできる。重厚感のある焼き肉の〆にとても効果的だった。
◆デザート
・アイスクリーム
