The life of a soba restaurant: soba and water
Our buckwheat flour is mainly produced in Hokkaido, and we carefully select the highest quality buckwheat of the year, and we ask a vendor to grind our own unique method to create a powder with large
...particles. We use a stone mill that rotates at an ultra-low speed of 16 revolutions per minute to create as little heat as possible. In order to enjoy the unique texture that comes from this process, we use 20% filler and delicious water. Water should be filtered through a special filter and chilled in the refrigerator overnight. Of course, this clean filtered water is also used for boiling, washing, and tightening.
