The owner and chef of John Day, Daeng Geun-ho, is a 40-year veteran in the industry. He has been active in Japan since 1994 and has demonstrated his skills in Akasaka, Funabashi, and Shin-Okubo. He is a talented chef who served as the head chef at Hachinosu (formerly Kurumu), which was famous in Shin-Okubo, and created all of the dishes. The owner of John Day was the head chef of Hachinosu, which was famous in Shin-Okubo. Among the dishes he creates, his specialty is “Hachinosamgyeopsal.” I cut the pork belly into pieces of <1.2cm> and <2cm> and made incisions in the shape of a honeycomb.
