おばんざいとお蕎麦のお店でジビエ会
★少人数でジビエと日本酒
定休日でしたが、お店の方のご協力でジビエ会を。
普段は美味しいお蕎麦とおばんざいを楽しめるお店です。店主さんがジビエを仕入れるルートを持っているようなので、要相談と事前予約で対応いただける特別コース。
★癖のない紅葉と牡丹を
ジビエは野性味あふれる風味があると思いがちですが、最近はほとんど癖がありません。
紅葉は脂身の少ない馬肉のようで、むしろ牛より癖がなく、牡丹は甘いたっぷりの脂が特徴。
様々な調理方法で美味しいジビエを楽しめました。
日本酒はお燗をあわせて。ほっこり幸せ。今度は自慢のお蕎麦頂きたいです。

★火入れ酒メインのPB酒を飲みまくり
酒飲み友達が定年後酒屋を継ぎ、酒屋PBを数年にわたって作っていましたが、色々集まってきたということで、一度まとめて飲んでみようという企画に参加。
お料理付きコースで6000円。店主さんのサービスで生ビールもOKに。
★ちょっと濃い目のおばんさいと美酒鍋
旬を盛り込んだお料理と、お店の定番おばんさいを数種類お酒と合わせて。
火入れ酒が多かったので、ほっこりするお料理はお燗に合いますね。
メインディッシュは「美酒鍋」。
トクトクと一升瓶からお酒を注ぎます。出汁を日本酒にしちゃうんだから、なかなか贅沢ですよ。
日本酒の味わいを残すために、初期設定の味付けはほぼナシ。
別皿の塩を好みに合わせてちょびちょびと足しながら頂きます。なんとも滋味深い味わい。
定番のお料理も多いのですが、丁寧な仕事でつくられていて、職人が作る料理に昇華されています。
イベントばかりで、まだ自慢のお蕎麦を食べたことがないので、次回はぜひに。
