1日のご褒美パフェにピッタリな豪華なパフェ
池袋のビル地下1階にオープンした夜パフェ専門店のもも袋。渋谷に「夜パフェ」というスートリーを持ち込んだ企業が池袋駅近くで開いたパフェ専門店だ。
「紅椿」は着色したラングドシャで椿を構築し、果実のメインにはみかんの一種「紅まどんな」。
柚子カモミールジュレ、抹茶ジェラート、手忙豆クリームなどの和の素材と16種の素材で構成。
変化する食感とテクスチャー、次は一体どんな素材が来るのか、見た目の豪華さも相まってワクワク感あふれる心に響くパフェ。
商品名にフルーツ名を冠せず、実に個性的なメニュー名だ。
「煙山さん」は13種の素材を使用し、煙が立ち上る様子を飴細工を使用し、モンブラン仕立てで表現。
竹炭のメレンゲの上にはラム酒の香りのマロンクリーム、下にはカシスのジェラート、桜の薫香を付与したフロランタンに餡、加賀某茶ジュレ。
舌で感じる香りと、鼻で知覚する香りがマロンに馴染み、プティガトーでは味わえない「パフェ型モンブラン」のよう。
やはり技巧を凝らした芸術作品のような外観は1日のご褒美にピッタリ。豪華なパフェは夜に食べたくなる心理にうまく訴求しているのだろう。

池袋の夜パフェ専門店「モモブクロ」。
3月の季節品の一つは「ミモザパフェ」。イタリアでは男性から女性に贈る習慣のある「ミモザ」の形をパフェ風にアレンジ。当然、テーマカラーはイエロー。
トップにはウコンで着色したジェノワーズ生地、菊、レモンとパッションフルーツのメレンゲ等を用いて、イエローが持つ味のイメージ通り、酸味を際立せた構成。
グラスの中は、ベルガモットソルベ、グローブ香る金柑コンポート、コアントロー香るカタラーナ、底面にはニセコ蒸留所ohoroGINとディル、金柑が香るシュレを配置。
爽やかな風味が折り重なる構成でさっぱりと終了。
グリーンの寒天は新鮮さを感じさせる色配置。
甘さの要素はやや控えめに、シトラス系の香りを活かし、見た目のカラーも相まって、気分もリフレッシュできそうなシーズン限定パフェだ。
