池袋東武百貨店・創作お肉ビストロ『BATON 東武百貨店 池袋店（バトン）』
鮨屋の魚×焼肉屋の肉×契約農家の珍しい旬の野菜=BATON。
系列店である寿司屋の鮮魚や焼肉屋のお肉を贅沢に使った新感覚のJapnese Bistro。
池袋「お魚とグリル BATON（バトン）」の支店。創業30年の都内を中心に寿司・焼肉などを店舗展開する有限会社リバーサイドの経営。2018年11月、東池袋に新業態「BATON」をオープン。現在の副社長が父上である代表取締役から事業承継の”バトン”をされ、引き継がれています。東武池袋店は2021の8月の開業。
ランチメニューは「選べるメインランチコース」、パスタが2種類。「海老とほうれん草のトマトクリームソース」と「合鴨と西洋葱の出汁醤油のペペロンチーノ」。ほかに「漬け炙り海鮮丼」「牛すじストロガノフ」「ローストビーフ丼」「牛ハラミステーキ丼」「サーモンハラスの照り焼き」等。基本全て「サラダ、スープ、ドリンク付。
池袋からスタートの年末のお買い物。この後日本橋三越まで回ります。ランチは無計画でしたので、とりあえず、デパートのレストランへ。
注文は、「鶏肉のコンフィ (低温調理)」、家族は『牛すじストロガノフ』。
【スープ】
「ほうれん草のクポタージュ」
緑が綺麗なほうれん草のクリームスープ。薄味ながら、きちんとブイヨンを作っていることがうかがえる美味しいスープです。
【サラダ】
「グリーンサラダ」
レタス、サニーレタス、コリンキーなどのサラダに、“無添加生ドレッシング”がかかっています。このお店の人気のオリジナルドレッシング。いろいろな野菜の旨味が感じられる、酸味もマイルドなドレッシングです。
【メイン】
「鶏肉のコンフィ (低温調理) マッシュルームソース」
鶏もも肉を68度の低温調理で仕上げているそうです。
イメージしていた骨付き鶏モモのコンフィではなく、大ぶりの鶏肉を低温調理。抵抗なく切れるほど、とろける綺麗な味わいです。ジューシーでしっとり、ハーブも香り、これだけでも美味しくいただけます。マッシュルームのクリームソースが敷いてありましたが、そこまで味に深みが無くて薄かったから要らないかも。（ごめんなさい）
【ごはん】
「十六穀米」
大盛り。まあまあの炊き加減。この金額ですから許容範囲。白米か十六穀米から選べます。
家族【メイン】
『牛すじストロガノフ』
ずっしりと重いデミグラスソースではなく、トマトを軸にした軽やかな口当たり。あっさりし過ぎかな、とも思ったけれど、家族にはその爽やかさが逆に良かったようです。
【ドリンク】
「コーヒー」
ドリンク付き、このレベルの高さで、2000円以内とはかなりコスパが良いと思われます。お姉さんも幅広の店内で、終始丁寧にご対応で頑張ってました！。美味しかった“BATON無添加オリジナルドレッシング”が販売されていたので次回は買って帰ろう。

ランチメニュー。クラシックランチコース、選べるメインランチコースなどに、ランチセットがあります。
パスタ（イベリコベーコンと黒キャベツのカチョエペペ 、アサリとほうれん草のアンチョビクリームパスタ等）メインランチ（大山鶏のコンフィ 、牛ハラミステーキ丼 ~自家製サルサソース、仔牛と季節野菜のブランケットクリーム煮込）等。
今日は、デザート無しのランチセットから、まぐろのレアステーキを。
サラダ・スープ・ライスorバケット・ドリンク付。
【スープ】
「ポトフ」
玉ねぎ、キャベツ、じゃがいも、ベーコン、ソーセージをじっくり煮込んだ温かいポトフのスープ。
【サラダ】
「グリーンサラダ」
レタス、サニーレタスなどのサラダに、“無添加生ドレッシング”。オリジナルのクリーミーなドレッシング。
【パン】
「フォカッチャ、パン・ド・ミ」
ほかほか。スタイルブレッド製。
【メイン】
「本マグロのレアステーキ、トロのベニエ添え 山椒香るガーリックソース」
肉厚のまぐろをレア目に火入れ。もう一つは、大葉で巻いたトロのベニエ。上には爽やかなリーフサラダ、山椒を添えて。ガツンとしたガーリックソースをかけて。マグロが大好きなので、こんなに新鮮で美味しいマグロがたっぷり味わうことができました。ソースも美味しいです。

「アイスコーヒー」
まぐろもトロのベニエも美味しかったです。とても効率の良い流れで、急ぎの際にも。
