表参道にある『青山 星のなる木』さんに訪問です。

秋の庭園をコンセプトとして作られた八寸。
この美しい盛り付けを楽しみたく星のなる木さんに訪問させていただいたくらい楽しみにしていた一皿です。
いろんなお料理が一口サイズで堪能できる、あれもこれも食べたい派にはたまらない八寸。
一つずつ手が込んであり美味しいです。
【椀物】清汁仕立て
海老真薯 紅葉人参 隠元 柚子
海老のお出汁の旨味が感じられる一皿です。
優しいお味でホッとします。
海老真薯がふわふわしてとても美味しい。
【造里】鮪 高知県産鮮魚 季節のあしらい
本鮪、石鯛
どちらも旨味が強くとても美味しいです。
【焼物】銀鰈粕漬け 染め卸し 檸檬
脂の乗った鰈は箸を入れるとサッとほぐれます。
ちょっと甘めなので、おろしと檸檬と一緒にいただくことにより飽きずにいただけます。
【強肴】佐賀牛炙り
獅子唐 柚子胡椒 炭塩
旨味の強い佐賀牛は炭のお塩と柚子胡椒と一緒にいただきます。
炭塩と一緒にいただくことでお肉の旨みがより感じられます。

ちりめん山椒
お米一粒一粒が立っている甘味の強いお米です。
ちりめん山椒も香物も美味しいです。
【甘味】讃岐和三盆糖のなめらかプリン
最初の一口はカラメルをかけずにそのままいただきます。
滑らかな舌触りのプリンは甘すぎず美味しい。
カラメルをかけると、また先程とは違った美味しさを感じられます。
少し酸味が感じられるカラメルソースとの相性も抜群です。
美味しくお祝いできました。
