Food Special 100% bamboo steamer and Tsukesoba
The buckwheat flour used is buckwheat noodles grown in the vast buckwheat fields that span the outer ring of Lake Towada, which straddles Aomori and Akita prefectures. We do not use any flour to bind the buckwheat noodles, making them gluten-free and chewy. We make our own original blend of ground buckwheat flour and the white buckwheat flour at the center of the soba noodles, and then add seasonal soba noodles to the mix to provide carefully selected soba noodles for each season. Please enjoy the rich aroma and smoothness of Juwari Soba to the fullest.
