取引先に西麻布に美味しいお寿司屋さんがあると連れて行って貰った同店。
あとで調べたらミシュランのお寿司屋らしい。
予約時間の17時に着くと、スタッフ総出でお出迎え。
接客もずば抜けている。
お通しから次から次に握られるお寿司。何貫食べたかわからないくらい次から次に口に入れていく。
一つ一つに手間隙が感じられ、素材そのままの味に一捻り加えられている。
魚や貝など基本的には鮮度の良いものを食べるのが一番といつも思っているが、このレベルの寿司は素材を変化させるフレンチのようなものと同じ。
なかなか入手困難という「大千の生ウニ」など貴重な体験が続きお腹いっぱいで至福の時間を終えた。
さすがミシュランと感心する一方で寿司を握る職人のあまり愛想良さを感じない、お客を知識でマウントしてくる姿勢は少しマイナスな点数になるかな。
