ホタテ貝は新鮮で肉厚、焼き加減も最高でした。バターだけを鉄板で溶かし、その上にレモンを搾り即席のバターソースを作りホタテにかける。バターの香ばしさとレモンの薫りが際立つ。
白身魚と野菜を耐熱フィルムで包み鉄板に直接乗せて蒸焼にする。フィルムが透明なので火の通り具合が一目瞭然、フィルムを開いた時トリュフの良い香りがしました。魚の旨味を野菜が吸い込み凝縮された出汁を具材を食べた後、スプーンで掬って飲む事を調理師に勧められ頂きました。
美味しかった。
美蘭牛はF1とのことがったが、この店自身で牛の健康的な飼育をしており、肉質がとても良かった。
生ビールが何故かとても美味い。
入り口がどこか見つけるのが大変。グランドハイアット東京の方からだと六階から四階に降りるような案内になっているが、ウエストウォークの方からだと直接四階に行ける。
店内は思っていたより広かった。
