A high-cost lunch with excellent preparation and nigiri techniques
Today we are having lunch at Sushidori. Lunchtime cherry blossom course (special nigiri only) 12,000 yen (tax included) I'd like an oolong tea for my drink. 〇12-day aged pickled sea bream Nigiri is salty and incredibly delicious. You can enjoy the sticky and rich flavor. 〇Kohada Nigiri Since the small skin at this time of year is not very greasy, they are made with minced shrimp sandwiched between them to add sweetness. It is wonderful. 〇Kuromutsu Konbu〆 A dish made with fatty Kuromutsu kelp and konbu〆. This is also good! ! ! 〇Katsuo Sashimi Sashimi served with miso flavored with alcohol. I want alcohol. 〇Aori squid nigiri 〇Kinmedai nigiri The right amount of searing brings out the sweetness of the fat. 〇 Shima shrimp nigiri The rich sweetness of the incredible shrimp. It's a touching experience. 〇Sardine wrapped in seaweed pickled in salted koji This is another delicious dish with the unique saltiness and sweetness of salted koji. 〇 Scallop Nigiri The scallops are slightly roasted to bring out their sweetness, and the umami of the shellfish explodes in your mouth. 〇 Indian tuna large tuna nigiri The umami of the fat was perfect, but I was a little concerned about the slightly peculiar aftertaste, but it was not a problem. Is delicious. 〇 Conger eel nigiri I felt that the fat was a little too much, but it was steamed soft and melted. I really liked the richness of the Tsume. 〇Toro Takumaki I guess it's the signature product here. It's really delicious. 〇Miso soup with shrimp and black-throat fish miso soup where you can enjoy the sweetness of the shrimp and the richness of the fat of the black-throated seaweed. 〇 Tamagoyaki 〇 Homemade vanilla ice cream All the nigiri were served at the perfect temperature for each topping, and the way the rice was soaked with air was exquisite, making it melt in your mouth. Today was my first time at Sushidosan in a while. The owner has changed, and we had a very different aged Sushi dish than back then. The following items were served. Sashimi ○ Nakatoro Nigiri ○ Kohada Nigiri ○ Ishitai Nigiri ○ Clam and Nanohana ○ Aji Nigiri ○ Isaki Nigiri ○ Salt Grilled (I lost the type of fish) ○ Undan Maki ○ Tai Nigiri ○ Botan Ebi Nigiri ○ Tuna brain Nigiri ○ Nodoguro Nigiri ○ Nodoguro grilled ○ Shime saba Maki ○ Akaundan Nigiri ○ Mafukuundan Nigiri (additional) ○ Anago Nigiri ○ Tamago Yaki ○ Miso soup ○ Kappa Maki (additional) ○ Mizuyokan Neta The sushi is deep-ripened, and if possible, we would like to have a fresh one in between the sushi. The tuna brain sushi was wonderful, melting in your mouth as soon as you put it in your mouth. The grilled nodoguro tuna was also excellent. We had to spend over 70,000 yen per person for dinner, including a bottle of expensive sake, but we were very full. Thank you very much.
