わたしがジジイなせいもあるが ここの「旨さ」の魅力はフロイト的リビドーを上回る。噂で散々聞かされていましたが 事実は想像を越えた。グランメゾンとは真逆、ビストロな構えなお店を オーナーひとりで切り盛りしていますが くり出される全ての料理は 私の味覚にジャストフィットし 記憶に残る最高な味わい。味わう事に神経が独占され 無口になり 饒舌さは失せる。黙してしまっても意思が通じる相手しか 同伴できない。
塩加減 火入 舌触り 歯ごたえ 温度 色彩 …
どんな素地を持ち 感性を磨き修行をすると こんな素敵なアウトプットができるのだろうか。
ここのステーキにいたっては フライパン1枚で マジックのような出来合い。外はカリカリ 中はジュシー。古今東西、特厚鉄板や網焼 炭火焼や薪焼、あまたあるステーキ専門店でも まず出逢えない美味さだ。
オーナーと少しお話しをしましたが カッコよく誠実さの塊のようなお方。応援したいけれど 人には内緒にしたいという 典型的なお店です。
