Chef: Munehiro Shimatani (born in Nara Prefecture), specialty genres: Japanese Cuisine, kaiseki, and kappo.His honed knife skills and hospitality that is close to his customers. He honed his skills at places such as Arashiyama Benkei and Kibune Hiroya in Kyoto. After winning a competition sponsored by Japanese Cuisine Academy and receiving praise for his outstanding and delicate knife skills in the mass media, he became the first head chef of [Miyagawacho Suiren] in 2012. Currently, he is putting his skills to use as the executive chef.
