グルメ仲間の先輩経営者に連れて行って頂いての訪問。鴨が売りという珍しいお店。
鴨肉と言ったら合鴨かジビエのイメージだったが、こんなに美味しい鴨肉に出会えるとは。歯切れがよく脂も軽めで旨みも濃厚だった。
コシのある10割蕎麦、鴨油で揚げたフライドポテト、苦味の一切ないカラスミとししゃもなど、神経質なくらいのこだわりが随所に感じられた。
コリコリかつみずみずしさのしっかり残ったホッキ貝に肝ソースをあえて最後はごはんで絡めて食べるのは抜群。高級寿司屋のコースみたい。
最後の締めの麻婆豆腐も自然な旨みと心地よい山椒のききで、硬めに炊かれたごはんも好みで可能な限りおかわりしたくなる。ご飯が最後のアイスも美味しくて3回おかわりした。
今考えるとイノベーティブヒュージョン感あるコース内容だった。相当食べ歩いてるんだろうなぁ。
滞在時間2時間半ほど。料理の内容も接客もとても丁寧だった。
