ChefChef – Hitoshi Toyoda (Toyoda Jin)
Chef Hitoshi Toyota. Born in 1991. Born into a family of chefs, he trained mainly in French cuisine. I learned the basics of cooking at ``Anu,'' and I learned genre-less ideas and fun at ``INUA.'' Under the influence of his uncle, he began teaching himself how to make soba and became immersed in the world of soba.
Food ``Omakase course'' where you can enjoy 100 percent soba noodles, our specialty grilled duck, and seasonal dishes.
The only menu item on offer is the ``Omakase Course,'' which consists of ``Kamoyaki'' made with duck meat purchased from about 20 companies and grilled on a tamahagane iron plate made by a master swordsmith. By grilling it on a hot iron plate with numerous holes and high thermal conductivity, you can enjoy the finest dish with concentrated flavor.

3rd floor of a building near Roppongi intersection. The door with a paper with the store's name written on it creates a mysterious atmosphere [emotion]. The interior, designed by Kyoto architect Toru Kijima, is a Japanese-style space that incorporates light and shadow and is unified with elegant colors. There are 7 seats at the counter. Complete reservations are made in advance and there are two shifts, starting at 17:30 and 20:30.

We have a rich lineup of drinks, including wine, whiskey, sake, and shochu. We are especially particular about wine, and our selection ranges from the latest vintages to older vintages. We will suggest a cup that goes well with the food according to the customer's pace.
