今夜も丁寧な一皿を堪能しました
再訪です。
前回伺った際に衝撃を受けて、お気に入りのお店になりました。
前回と同様に所作が丁寧で、料理の説明の表現が美しいです。
一皿目から最後まで抜け目なく全て美味しく頂きました。
次回も楽しみにしています。

素材を最大限に活かす実力と大将の実直なお人柄が素晴らしいお店です
開店から7ヶ月でミシュラン二つ星に輝いたという事で、ずっと気になっていたお店です。
【明寂】という名前がセンスが溢れていますね。
お料理、どれも素晴らしかったです。
鮎を3匹違った食べ方で頂いたのですが、アプローチが違うだけでこんなにも違うお料理になるのかと驚きました。
シンプルで究極引き算のお料理がメインと思っていましたが、ゆばの素麺(7月の織姫の願いを込めて)や絹の巻き物等様々やアイデアがありかなり楽しませて頂きました。
【本日の内容】
○長芋の水煮
水と塩だけで
○みる貝ほっけ貝の酢味噌煮 柑橘ジュレ 蓮根
蓮根の歯応えとの相性が良かったです
○鯛と蛸
オリジナル蛸塩で頂きましたが普通の塩より穏やかなので沢山つけて大丈夫です
○鱧玉ねぎ
てんじんさまという梅干しの中心が入っていました
○びわ鱒 わらび
○すっぽんの茶碗蒸し
○あゆ
塩と燻製でアプローチを変えて頂きました
○青イチヂクの白和え
○絹の巻き寿司

大将のお人柄が本当に素晴らしくて、全てのお客様に丁寧に接しているのが見てわかります。
ミシュランをあっという間に取ったのにも関わらず、奢らず直向きに料理に向き合っている姿が圧巻でした。
素敵なお店に出会えて嬉しいです。
