聖護院大根
出汁を一切使ってません。
塩のみ…。(^o^)
橙だいだいを器にして…。
安保柿和え、赤貝、タイラ貝
アッサリしてるのですが貝の
味わいがある一品です。
明石産の天然真鯛、真蛸…。
魚骨の出汁で作った醤油
蛸で作った塩、
塩タレは鯛のアラから…
手の込み様が物凄いです。
お椀は金時人参と梅の香り
メジマグロのわら焼き
ちり酢
カニ饅頭かぶらのすり流し
鰯の全卵薄焼き卵で手巻きで頂きます。
牛蒡千切りにえごま、きんかんの和物
カラスミもち
説明を受けたのですが…。（メモれませんでした。）
蕎麦 金沢鳥越産の蕎麦粉を使用してるそうです。
鯛の醤油粉 魚の身に出汁醤油を含ませて乾燥させて作るそうです。
クエの松笠焼き
これも本当に美味しく頂きました。
鰹の漬け、雑魚、アナゴ、香の物
こちらは土鍋で炊きたてのご飯で、頂きました。
もちろんおかわりでした。
残りの土鍋ご飯ですっぽんの玉子雑炊です。
本当にお腹いっぱいになりました。
デザートで雪餅、氷餅
いちごあんこ
どの料理も繊細ですし接客も素晴らしいお店でした。
僕の中では１番のお店でした。
大変美味しく頂きました。
