麻布十番商店街の最西端にある「ル・ポトローズ」。
お店が5階にあるので大きな窓から、六本木ヒルズから麻布十番の街が一望できます。テーブル上には、本日店名“ローズ”ではなく可憐な“アザミ”が飾られていていました。
本間寛シェフはフランス料理歴３０年以上、ホテルや老舗の洋食屋さんで料理長として腕を振るわれてきたそうです。
ランチは・本日のランチセット（群馬豚ロースのステーキか鮮魚のブイヤベース）松坂牛のハンバーグ、コース等。
今日は目的の“ブイヤーベース”。（パン・スープ・サラダ・メイン・コーヒー＋デザート）
【スープ】
「ヴィシソワーズ」
玉ねぎのやさしい甘みとじゃがいもの風味をたっぷり味わえるまろやかな冷製ポタージュ。トッピングの浅葱がいいアクセント。
【サラダ】
「グリーンサラダ」
多種・色彩豊かなサラダ、真っ赤なトマト、人参、キューリ、パプリカ、紅心大根、レタスや赤キャベツ、ビーツ、などが入り、おいしい野菜ドレッシングが掛かっています。
【パン】
『バゲット』
オリーブオイルがあらかじめかかっています。軽くフワッとした感触。藤森さんのビゴ製。
【メイン】
「鮮魚のブイヤベース」
中心にバジルペーストのクロスティーニ（ブルスケッタ）。メインの魚を伺うと、本日は平目とアンコウ。ヒラメのポワレに締まったアンコウ、その白子と卵巣、マッシュルームやお野菜まで想像以上に入っています。トマトベースのスープにスパイスやハーブ、そこに魚の骨やアラで煮込んだおダシがぎゅっと濃縮されたスープドゥポワソンが一緒になったトマト風味のブイヤベース。こくうまスープに投入用ご飯欲しかったなー。
【デザート】
『クラシックプリン』
ふわっと添えられたクレームシャンテイに、しっかり固めた昔風プリン。カラメルソースは苦み無しで甘さ控えめのジャスト。ひそかなアイドルがトップスターになった昨今。
【ドリンク】
「コーヒー」
“直送コスタリカ産”のコーヒー。カップが可愛らしい。
お一人でお調理されているので、ゆっくりな流れですが、笑顔の元気なマダムがテキパキとこなされ、メリハリあっていい感じ。確かにホテル・ダイニングのお料理の様な誠実さに素朴なフランスの家庭料理を兼ね備えた確かなお料理。今日もご近所のファミリーやご夫婦、がたくさん見えていました。
シェフのリビングのようなアットホームな雰囲気で、大きな窓から広大な六本木の空が望めて、開放的な気分になれます。ゆったりととても気持ち良く過ごせるお店です。このレストランへ伺う時は、天気の良い日を願いましょう。
