【麻布十番 ふくだ】
日本料理を修業し始め、今年で18年目の福田和人大将が、2014年にオープンさせた割烹のお店。
ミシュラン一つ星。でも、過度な宣伝などはせず、目の前のお客さんと真面目に向き合い、丁寧な仕事ぶりでお料理を提供してくれる稀有なスタイル。
豚子は大将の笑顔に早速クラクラするも、女将さんの内面からにじみ出る美しさにハッと我にかえる。
お出汁が自慢のようで、一組一組に、削りたての鰹節と利尻産の天然昆布を贅沢に使い、引きたてを用意してくれる。
お料理は本当に丁寧で繊細。
でも、ちょっとお上品すぎるかな。もう少し味に雑味をもってきたほうがよいのかも。
