He honed his skills at Japanese Cuisine restaurants in Kyoto, Tokyo, and Yokohama for 18 years, and has mastered the mainstream of Japanese Cuisine. In 2014, he opened his own restaurant, "Azabujuban Fukuda," run by a husband and wife duo, and conveys the four seasons of food through Japanese Cuisine that can be enjoyed without stress. The delicate beauty of the food, woven together by his refined sensibility and careful technique, deeply delights his guests. He has been awarded one star in the Michelin Guide Tokyo 2016 for seven consecutive years.

With the desire to "let guests feel satisfied by eating lots of delicious food," the restaurant visits Tsukiji every day and purchases only the ingredients that will be used in the dishes it will be cooking that day. The restaurant is particular about using ingredients whose producers they know, and for rice, which can be said to be the heart of Japanese cuisine, they directly purchase pesticide-free, sun-dried rice that has been specially grown by a farmer they know. The restaurant also uses dashi made by shaving bonito right in front of the guests, making for an unforgettable experience in both aroma and flavor.

The bright interior and plain wooden counter are decorated with seasonal flowers, and welcome two groups of guests per day. The owner and proprietress work in harmony in the kitchen, creating a harmonious atmosphere where diners can relax and enjoy the kaiseki cuisine, which is often considered stiff, while sipping on sake or other drinks of their choice.
