郡司さん、進化してます！
なんというか、いまの空気をちゃんと掴んで進化している麻布十番でも数少ないお店だと思う。ひとえにオーナー店主の郡司さんの人柄と勉強熱心さがいまのお店の状況に結実しているはず。東京カレンダーとかで紹介されて、客層も少し若くなったし、幅広くなった。その分、ランチをやめて、ディナーに専念しているけど、正解だと思う。
メニューは膨大。おばんさい、酒のあてから、お刺身、馬肉、それに豚、鶏、牛、鯨などなどを客の好みに合わせて適宜調理する。さらに丼もの、うどん、鍋など〆も豊富にラインナップ。これだけのメニューを仕込む手間を考えると頭が下がる思い。
今日頂いたのは、
イワシの梅オイル煮（定番、美味しい）
ウニ豆腐（白雲丹の方が甘いんだよね）
加茂茄子田楽（茄子好きな奥様のご指名）
トリュフだし巻き卵（トリュフ好きな奥様のご指名）
ミックスフライ（鰺フライ、ホタテ貝柱フライ、海老フライを盛り合わせに）
という感じでした。
最近はグラスシャンパーニュと赤、白をそれぞれ3種類ずつ。日本酒の冷や酒も含め、シャンパーニュ、ワイン、冷や酒をすべての同じフォルムのワイングラスで供している。お客の嗜好の変化、客層の変化、効率、その他いろいろ考えてここに落ち着いたんだろうな、と思う。
そしてそんな試行錯誤も、郡司さんの人懐こくて控えめなキャラクターが嫌味に見せないところが憎いね。麻布十番で和食。色々食べたいし、色々飲みたい。メンバーは老若男女。そんなとき、一番におススメできるお店が、この麻布郡司さんです。
