大阪・北新地にある人気の肉割烹レストランの東京店である『salon du kuma3 麻布』
麻布十番駅から徒歩5分強の地下1Fにあります。
店内は目の前でメニューが作られる時を感じられる臨場感あるカウンター席が7席、個室が1部屋あるようです。
この日は、和牛ジャーナル氏のコミュニティの集まりで好きなメニューを並スタメンに揃えたコース仕立て！

◇和牛タン刺し 佃煮
タン刺しは食感をダイレクトに感じることができます。
佃煮のアクセントも最高です。
◇山形サーロイン刺し 土佐醤油
融点が低いためかすごく舌触りが滑らか。
かぼすでさっぱりと。
◇ユッケご飯 N25キャビア
サーロのユッケは初めて！
大体ウチモモが多いけど、サーロはそこまで主張しないからN25のキャビアとの調和がすごく良い。卵黄もマイルドで全体が綺麗におさまってる感が良い。
◇しゃぶしゃぶ
煮詰めてる時から胡麻ダレの香りがすごく良かった。白髪ネギの食感も最高。
◇和牛テール
一人前の量が多すぎてびっくりしたけど、ほろけるほど煮込まれたテールは旨味たっぷりで翌朝のお肌の調子は良いと確信したくらいコラーゲンたっぷりでした。
◇シャトーブリアンのカツサンド
カレーとキャベツベースの自家製ソースが美味い。
◇牛タンのシチュー
ぐつぐつ煮込まれたタンシチュー。
上に乗せられたマッシュポテトがよりマイルドに緩和してくれる。
なぜか僕のだけなかなか冷めなくて終始ぐつぐつしてました。。
◇サーロインと牛タンの炭火焼き
サーロはわさび、タンはレモンで。
ここで初回の焼きでした。
◇ステークアッシュ
くまさんバーガー。
半分食べてもう半分にはチーズをかけていただきます。
◇肉寿司
まるでとろたくかのビジュアルなサロタク。
ユッケ丼と同じく滑らかで沢庵の食感とアクセントが際立つ。
余ったものもおかわりでいただけました。
◇デザート
ヨーグルトのデザート。
甘さ控えめで締めにぴったりでした。
名古屋転勤のため、東京ラストのグルメ会での訪問で素晴らしい空間と料理とスタッフ様でした。
視覚、聴覚、味覚、嗅覚全て刺激される『salon du kuma3』は最高でした。
