先日お伺いした串揚げ専門店、brochette KUSHIAGE TOKYOさん
麻布十番という街に相応しい、重厚感のあるお洒落な店内で、創作串揚げを楽しめるお店です
串揚げは極限まで油を切るようにして揚げられており、これまで食べた串揚げとはまるで違う、新感覚の軽さが味わえます
20本コースはバラエティ豊かな串が登場し、定番ものからお店オリジナルの変わり種まで幅広く楽しめます
個人的にツボだったのが、チーズと蕗の薹を合わせた一本
蕗の薹の心地よい苦味と、チーズのまろやかさ、そして油の柔らかなコクが見事にマッチした、素晴らしいアイデアの一品でした
ホタルイカや太刀魚なども、普段食べない串揚げというアプローチで頂くことにより、食感や味の広がり方に新しい発見があります
季節が変わる頃に、また食べに伺いたいお店です
