Chef Kawabata Kyota spent 10 years training at the long-established Italian Cuisine "Corsica" in Ebisu, which sadly closed in 2021, where he learned culinary techniques from the basics. The dishes he serves are based on the techniques he cultivated at famous restaurants, such as sauces made from scratch using carefully selected ingredients and bouillon made carefully and slowly, and all of them have gentle flavors that Japanese people are familiar with.
