ランチでひらまつ広尾に伺いました。
アミューズから一品一品がこだわられていました。
ひらまつ40年続くイタリア産赤ピーマンムースとトマトの冷製スープは優しい味でムースとスープを合わせて食べると深い味わいでした。
魚は鱸で新鮮な鱸で火入れ加減、ソースとの相性ジロール茸、じゃがいもとの相性は凄くよく、ジロール茸の酸味も味わえる一品でした。
メインのお肉は山形産の金華豚。柔らかく甘味もあり、アスパラや季節の野菜の甘み、塩加減をたのしめました。
デセールのあかつきのコンポートは桃の甘味を最大限に生かされており、まわりのマラスキーノ風味のグラニテもさっぱり暑い夏にはとてもいい組み合わせでした。
アラカルトでチーズを頼みましたが15から16種類のチーズを一つ一つ丁寧に説明してくれて蜂蜜、ドライフルーツとの組み合わせ初めてみて食べるチーズも楽しめました。
サービスの方の分かりやすい説明と笑顔の接客がとても印象深く今まで行ったレストランの中でもとてもいい接客で料理もより一層楽しめることができました。
