ChefYusuke Namai (NAMAI YUSUKE) - Capturing the trends of the times from a bird's-eye view
Born in Tokyo in 1975. At the age of 25, he switched from music to the cooking world. In 2003, he began studying under Ueki Masahito, and spent about five years training at Restaurants J in Omotesando and Masa's in Karuizawa. After serving as a chef at Ulu in Karuizawa for three years, he returned to Tokyo. In November 2012, he became the chef of Chic Poutétre in Hatchobori. Although he received one Michelin star in 2015, he went independent in March 2017. In September 2017, he opened Ode in Hiroo, Tokyo.

Ode, which has attracted attention from both within Japan and overseas, serves unparalleled cuisine that can only be enjoyed in Japan, using domestic ingredients sourced from passionate and ambitious producers. The restaurant's originality can be felt in each and every dish, such as the striking amuse-bouche "Dragon Ball" and the specialty dish in which meringue made from sardine bones blends seamlessly with the gray plate. The wine pairings, with around 80 varieties on offer at all times, further enhance the flavor, and captivate the hearts of guests.

While the interior is based on inorganic shades of gray, the combination of different materials such as wood, mortar, and stainless steel gives off a soft warmth. From the tableware, lighting, interior, and uniforms, everything is unified in gray, which is Chef Namai's favorite color and which he finds comfortable, because he wants customers to "concentrate on their cooking." One of the charms of "Ode" is its elegance without being too casual, and the comfortable atmosphere where you can relax and enjoy your meal.
