グルメストリート日赤通りのパークアクシス南青山7丁目1Fにあります「4000 Chinese Restaurant」さんへ訪問です。
日本中華の重鎮、陳建一氏の右腕として
約30年近く「szechwan restaurant陳」グループを支えた菰田欣也シェフが2018年にオープンしたお店で、菰田シェフ自身が総料理長を務める中国四川料理を提供する完全予約制のレストランであります。
漢字で「四川」と書くとガッチリ四川料理になるので店名はあえて数字で「4000」とカジュアルに表記をしています。
菰田欣也氏は五反田、麻布十番と火鍋専門店【ファイヤーホール4000】を開店し、2023年11月24日には麻布台ヒルズにふかひれ家もオープンしその勢いが止まりません。
ガラス張りの開放感のある外観に
内装はシックな空間のカウンター8席とテーブル席もあり。
菰田欣也氏の四川料理はどれも辛すぎず、大人しすぎずと絶妙なバランスで食材そのものの
旨みも楽しむことができます。
伊勢海老にはガーリックと香辛料上手に合わせ、河豚には唐辛子でほんのりスープに辛味を移し、鶏肉と手羽先のスパイスと、どれも絶妙な塩梅です。
あえて身も食べる一緒に食べる北京ダックは
香味野菜を詰めて2日間寝かせてから、水飴と酢で熱を入れ1日吊るして脂を落としてから火入れされた、北京ダックは皮はパリッと身はしっとり仕上げた絶品です。
