～シュリンプ・ガストロノミー、が作り出す珠玉の濃厚海老のラーメンです。。
海老はバケツ一杯でも食べちゃうほど好きすぎる食材。こちらはずっと行きたいと思っていたのですが、新橋から歩いて少しかかるので敬遠してました。ジリジリな熱き日に実行です。店内に入ると海老のいい香りがふわりと漂うこちらのお店。13時を過ぎてもほぼ満席。
平日のランチメニューには、海老ラーメンセットか、海老担々麺セットが主流。
「海老ラーメンセット(前菜・バゲット・海老ラーメン)」をセレクトします。らーめんの麺の量は、大盛りの設定はないそうです。
【前菜】
「レッドシュリンプのシーザーサラダ」
海老ののった、クルトン入り色彩豊かで賑やかなサラダ。チーズのきいたシーザードレッシングが掛かっています。
【パン】
『バゲット』
クラストはクリスピー。ソースに最適の薄くスライスされたバゲット。これは海老のエキスが浸み出たスープに浸していただくため、しばらく我慢。
【海老ラーメン】
テーブルに到着すると同時に、海老の風味を拡散する芳醇極まる、海老のラーメン。
トッピング・具材は、レッドシュリンプのフリット、海老のそぼろ、水菜、スライスたまねぎ、パクチー。エビ油も香り付け程度のようです。カリッとサクサクのえびのフリットは食感がいい。スープには海老の旨味とコクが凝縮されています。ただの濃厚なオイリーなスープとは違い、臭みやくせがありません。
麺は綺麗な玉子色をした中太の縮れ麺は、つるつるした表面、もちもちした食感。濃厚なスープが麺にしっかり絡みます。
想像していたのは、スープビスク、ですが実際はまったく違いました。というのも芝麻醤が利いた胡麻の香りとせきこむほど刺激するピリピリ感があったので担々麵が間違ってきたのだと思うけど、好きなのでどちらでも構いません。
このお店の位置。昔私がいた銀行の内幸町支店があった場所です。新人時代を思い出して泣きそうになりました。(‘ω’)ノ
こちらはスタッフ皆さんが丁寧で神経が行き届いているサービスです。テラス席もあって熱くなけれな抵抗なく利用できると思います。今日のような猛暑でも、使用していらっしゃる方がいました。
