Environmental and social initiatives
Reducing Food Waste
A "compost plant" was introduced in the hotel in 1999 to reduce food loss. Approximately 5 tons of food waste is turned into organic compost per day. The compost is purchased by contracted farmers, and the vegetables grown are provided in the employee Cafeterias and some Restaurants, and are also reused as fertilizer to maintain the Japanese garden and red rose garden on the premises.
Using Sustainable Ingredients
We have adopted plant-based alternative foods as an approach to the social issues of securing food security and reducing environmental impact. Hamburger and pasta made with "soy meat" made by extracting vegetable protein from soybean ingredients, Sweets made with plant-based butter and "soy milk cream," and yellow peas made with thin skins that are usually thrown away. We offer next-generation gourmet food that is sustainable and delicious, such as noodle dishes made with 100% ZENB noodles.
Environmental Protection Initiatives
We are carefully protecting and nurturing the 400,000 tsubo Japanese garden that has been inherited for 400 years. For management and maintenance, we use gray water made from recycled kitchen wastewater and compost made from recycled food waste, and we use LEDs to light up at night. We are also promoting rooftop greening to reduce CO2 emissions and reduce the heat island effect. The Red Rose Garden, a rooftop garden with 30,000 crimson roses of about 30 different varieties, was born from this effort and is open to members and other hotel users for a limited time.
