``We want our Japanese customers to enjoy the pure cuisine of our homeland of South India.'' Therefore, we do not arrange our dishes specifically for Japanese people. From the 1950s, when there was no gourmet boom, to the present day, we have been supported by many repeat customers. Ajanta's cuisine, which has not changed since its opening, is enjoyed by customers from a wide range of age groups.

In order to maintain the quality of stimulation, aroma, and richness, we use carefully selected spices, mainly from South India.
