銀座かねさかで長年2番手を務められていた三平大将のお店。
ここはかねさか系列ではなく完全独立店。
かねさかに行ってた頃何回かお見かけしたことがあったので来てみることに。
お店はホテルの中にあります。
ランチは握りのみの1万とつまみからの握りの1万５千円の二種類。
今回は握りのみのコースで。

握りはかねさか系統いうこともあり小さめの握りですがフォルムが綺麗な鮨。
シャリは柔らかめと普通の絶妙な間でほのかに酸味のある優しいシャリ、少し赤酢もはいってるのかな？番人受けするであろう食べ疲れしなそうなシャリでした。
丁寧な仕事が施された握りはどれも美味しくペロリ。
クロムツには大葉、車海老にはおぼろを仕込ませたり、春子も〆てあって美味しかったー
最近鯖に昆布はよく見るけど小肌には初めてでこれも良かったです。
正統派の美味しいお鮨でした。
