With the opening of Terakoya Sushi Takumi, one of Japan's leading sushi restaurants in Azabudai Hills, the sushi chefs have changed a bit, but the quality remains the same, which is to be expected. The appetizers and sushi are served alternately at a good tempo. The way the Harukotai is aged? The way it is left to rest? is unique. It is moist and refreshing, and for me this is definitely the best Harukotai sushi. The temperature of the rice and the way it unravels are just perfect, and the moment it unravels in your mouth you are filled with a sense of happiness. I savored each sushi so slowly in my mouth that it was a shame to chew it. Additional orders included Harukotai vinegared salmon, boiled clams, bonito, and the specialty, monkfish liver and ohagi. The pairing of monkfish liver and narazuke is common these days, but this is the real deal. It was the first time in a while that I was so impressed with sushi.
