weekdays and weekend nights. Make a reservation and go. We are trying to stay ahead of the soba restaurants that are likely to be replaced among the 100 famous restaurants. When I got there, there were other customers, but it seemed that I was one of the customers who started relatively early that day. Starting with Small dish of white fish, we had 7 dishes and 2 pieces of soba noodles. There is tuna, milt, sakura shrimp, and Yamagata beef. The ingredients are also a mix of seasonal and locally sourced ingredients. There is also a Western arrangement with Japanese-style meal. The fragrant sakura shrimp kakiage and the small bowl of meuniere-style milt served over a small bowl of steamed rice are especially wonderful, and I like the way the dishes are made to perfection without being too dependent on the ingredients. There is also plenty of alcohol. Soba is the native soba of Eiheiji Temple and Ibaraki Prefecture. Mori soba format. Although the soup may be a little thin and the soy sauce may be thin, the style brings out the strength and flavor of the soba. The owner does all the cooking, and part-time helpers carry the food and pour the drinks. For better or for worse, the overall tone of the story was consistent, so I was able to have a relaxing time. Overall, it's a good restaurant and I'm satisfied with it, but it feels strange to talk about it in the context of a soba restaurant. I feel like it would be a lot more relaxing if the top genres, ``soba'' and `` Japanese Cuisine,'' were reversed. Most of last year's 100 famous soba stores in Tokyo had this style. When evaluating in terms of food satisfaction, between a so-called soba restaurant and this type of kaiseki-style soba restaurant, one tends to rate the latter highly. Even though I don't like the former, I tend to be that way. But originally, it's not something that can be talked about in the same way...
