東京の「神楽坂 ルバイヤート」に行ってきました。
友人が良く行くお店で、「山梨勝沼丸藤」が経営するレストランです。
ワインは、いろいろな地域の300種600本以上を揃えているそうです。
場所は、東京都新宿区若宮町10-7
店内は、カウンターにテーブル席でカジュアルでとても居心地のよい空間です。
アミューズ、前菜、魚料理、肉料理、デザート、コーヒーｏｒ紅茶、自家製パン
の5500円のコースを頂きました。
内容は、
アミューズ
カリッと焼いた薄焼きのバゲットの上に地鶏のムース。
まったりした口当たりにほど良い塩気。
とりあえず、グラスシャンパンで乾杯です。
フォアグラのテリーヌとオレンジのコンフィチュール
表面のゼリーの層のオレンジのコンフィがまったりしたフォアグラに合います
さっぱりした酸味でバランスよく美味しい。
せっかく来たので、ルバイヤートのシャルドネ 2007を頂きます。
シャルドネが香り豊かで、しっかりしてすっきりした味わいです
魚介のブイヤベース
中央にソテーされた金目鯛、両脇に大ぶりのムール貝。
金目鯛は美味しく、味わい深いブイヤベース仕立てで、小さく刻まれた野菜も良い味を出しています。
甲州地鶏胸肉のロースト赤ワインソース
胸肉ともも肉の選択で、胸肉を選択しました。
パサつきがちな鶏ムネ肉ですが、柔らかくジューシィなローストで、
ルバイヤート ルージュ樽貯蔵2002とよくマッチしています。
鶏白レバーのムース
フォアグラのムースのように濃厚な味わいの鶏白レバーのムースです。
ジェラートのような卵形のかたまりが二つとパセリとムースをつけるための硬い焼いたバゲット
89シャリオドール甲州と一緒にいただきましたが、お互いの柔らかい甘さを引き出し、
口の中に広がる複雑な味わいが何ともいえません。
これだけで、ワインが進んでしまいます。
デザート
ジュレに甘酸っぱいイチゴ、トロリとした濃厚な甘みのソースにコーヒーのソルベ。
冷たさと甘さが上質ですっきりとした味わいです。
今回は、甲州ワインを堪能しました。
ワインを楽しむための料理で、メリハリのある皿を出してくれ、美味しくワインを頂きました。
ワインの種類も多く、値段も手ごろですので札幌にあれば通いたい店でした。
