訪問したタイミングの直近でフレンチやイタリアンが続いていたという環境要因もあるかもしれませんが、初めての訪問で、この虎白において改めての和食の価値を感じることが出来ました。その中でも何か真骨頂というか、筆舌しがたいのですがそんなものを感じるお料理でした。
もちろんお料理のみならず、雰囲気、サービス、器、お酒もどれもが一流で、その全てが幸せな時間と空間を演出しているようでした。
季節としては初春の頃合いで、春の山菜もあり、後は河豚は白子もお刺身も味わい深く大変美味しかったです。
お料理にはキャビアやトリュフも使われていて、でもそれはフレンチを取り入れたという感じではなく、和食の食材としてちゃんと存在していました。その意味でもやはり和食のなんというか包容力って凄いなと感じました。
次回の予約も取れて再訪が今からもう楽しみです。
