ChefIntroduction of our chef
The chef's name is Ryasmai (Masui Someya). I came to Japan in 2010 and became a naturalized Japanese citizen. He worked as a chef at the famous Cambodian Restaurants Romden, and later worked as a trainer for young chefs. The record of that time was published as a photo book called ``FromSpiderstoWaterLilies'', and his photo is also included. I am fluent in Japanese and look forward to conversing with customers, so please feel free to contact me.
Food Characteristics of Cambodian cuisine
Cambodian cuisine is characterized by its mild flavor, which is familiar to Japanese people. There is a wide variety of dishes, including dishes that use plenty of vegetables, as well as noodle and rice dishes. The highlight is Cambodia's unique seasoning, "Pulohok." A seasoning made from salted small fish, it is rich in umami ingredients. Tamarind paste, a seasoning made from fruit, also creates a deep flavor. Our restaurant also accommodates the requests of people who don't like spicy foods or coriander.
