神楽坂の路地、とってつけたぐらいに
隠れ家的な感じで、お店がありました。
中に入ると、大きなコの字のカウンターの中で
調理されているのが良く見えます。
料理対決番組の映像みたいで見ていて楽しい。
昨年、京都の枝魯枝魯さんのメンバーだった方の
祇園にあるくずしよしよしというお店が
おいしく、そして楽しかった。
そこの店に枝魯枝魯さんの名刺があり
東京の神楽坂にあるんだったら行ってみたいと
名刺の画像を残しておいた。
くずし割烹という言葉は、当初
割烹・和食の既成概念に捉われず、様々な
組み合わせで料理を楽しむという意味らしく、
また何万円もする金持ちだけの食べ物でなく
学生さんでも手の届く金額で割烹をくずす。
だったよう。とネットででてきた。
それを最初に京都から発信したのが枝魯枝魯だと
祇園で食べていた時に、常連さんが言っていた。
神楽坂のお店は、まさにその〈くずし割烹〉で
高めの居酒屋で飲むようなぐらいの値段で
とてもリーズナブルな価格で提供されますが
一品一品の料理には、確かな割烹の技術に
新しいアイディアも載っている感じ。
コース料理のみで毎月内容が変わるようです。
お客さんは土地柄か、店主の方がパリにいたからか
学生さんでなく外国の方が多く（半分ぐらい？）、
料理と雰囲気を楽しんでおられました。
最高級の割烹と比べれば、素材も違うと思いますが
日本人も外国人も新しい割烹料理をこんなに
楽しめてるのは、えらいなあ～
日本料理の良さを広めている感じだなぁ。
そう思いながら、私も料理を楽しみました。
