Chef Wakatsuki moved to France at the age of 25 after working at La Marais and Tour d'Argent. He trained at star Restaurants such as ``Esperance'' and ``Récamier,'' and after returning to Japan, he worked at ``Hotel Nikko Tokyo'' and ``L'Osier,'' before becoming the chef at ``Aimé Vivert.'' In 2007, it was awarded two stars in the Michelin Guide Tokyo, and since then it has been awarded stars for seven consecutive years. In Japan, where there are few truly traditional French cuisine, the sincere attitude of inheriting the orthodox style attracts many foodies.
