飲食店はモノを作るのに製造業ではなくサービス業。
ということは自分達が良いと思うモノを作って出すことよりも客が満足することが大切。
ということはお客さんの反応って気になると思うんだけど、空いていたのに通り一遍の説明で配膳、下膳する時もまったく機械的でコチラの満足度を気にするそぶり無し。
ワインのペアリングもお願いしましたが自分達の選んだペアリングでどんな感想なのか気にならないのかなぁ。
こういうのってお客さんは感じちゃうんですよねー
神楽坂のワインバーを牽引する存在だと思うので奮起を願います。
ちなみにコース料理はパスタ以外は及第点、いずれもワインに合う良いお料理でした。ペアリングもパスタ以外は素晴らしい。特にスターターのフェラーリのスパークリング、最後のバルバレスコは秀逸。
パスタは猪のラグー、太目のパスタでした。ソースが緩くてパスタと絡まず、太目のパスタの重い食感だけが残りました。合わせるワインはトスカーナサンジョベーゼのロゼでした。単体では美味しかったもののタンニンが弱くラグーソースの脂味を解消するには至らず酸味だけが浮いてチグハグな印象でした。
フロアの女性とソムリエの1人にはホスピタリティを感じました。
