日本料理の赤坂しょう山、LEAUで経験を積まれた経歴の陣内シェフは宮崎出身。
宮崎牛や地鶏など、宮崎の食材をふんだんに使用し、心温まるお料理の数々。
特にこの時期だけのせいこ蟹を使用したお料理は蟹身の旨味と内子の食感が最高で、丁寧な手仕事は日本料理を経験されているからこそ。
和の食材で作ったソースや炭火で焼いた食材も香ばしさと旨味のバランスが最高でした。
フレンチの技法では引き出せない、食材の旨味の引き出し方を感じられます。日本人にも日本好きな外国の方でも食べやすいフランス料理だと思います。
ワインもブルゴーニュが豊富なのも◎
